There’s no better place to farm oysters than in the Kyle of Tongue, on the very tip of northern Scotland. The Kyle, set between Ben Loyal and Ben Hope, empties and refills with every tide, bringing a fresh, clean, clear inflow of water from the Pentland Firth and the Atlantic ocean. With it, comes the phytoplankton necessary for oyster growth.
From this they obtain the diet of microscopic marine plant life from which they develop their outstandingly delicious flavour. After three years, the oysters are plump and juicy - a gourmet’s delight, recognised by restaurants (and oyster lovers) all over the country.Angela Mackay has been running Kyle of Tongue Oysters for ten years and the farm has won Grade A assessment. Using natural materials, the native oysters have been reseeded with the aim of improving native stocks - a programme which was supported by a grant from the Marine Innovation Award Scheme run by the Highland Council.
There are many species of fish and shellfish that are considered for inclusion in the Mey Selections range but only those that are sourced from fishermen committed to sustainable fishing will be accepted for sale under the Mey Selections brand. North Highland Products is actively working to secure MSC approval for all its fish and shellfish supplies.
